Pineapple juice pairs really well with the spice's notes, agave syrup keeps it from getting too sharp, and Triple Sec adds just enough citrus. A few mint leaves on top round everything out so nicely. The big thing I learned was not to over-infuse the tequila. Twenty-four hours is plenty. Any longer and it starts tasting bitter and overpowering.

Instructions:

  1. Infuse the Tequila: At least 24 hours ahead, add 1 tablespoon of lightly crushed Grains of Paradise to a bottle of tequila. Seal and let sit at room temperature. Strain out the seeds before using. This can be done in bulk and stored for future cocktails.
  2. Fill a cocktail shaker halfway with ice cubes.
  3. Add the ingredients: Pour 1.5 fluid ounces Grains of Paradise infused Tequila 1 fluid ounces pineapple juice pineapple juice, 0.8 fluid ounces agave syrup agave syrup, and 0.5 fluid ounces Triple Sec Triple Sec into the shaker.
  4. Shake vigorously: Seal and shake for about 15 seconds until the outside of the shaker feels ice cold.
  5. If you're feeling fancy: Grab your chilled glass and fill it with fresh ice. Strain the cocktail from the shaker into the glass using a cocktail strainer.
  6. Garnish with fresh mint leaves. Serve and enjoy the warm, spicy complexity of the Grains of Paradise on the finish.
  7. Infusion tip: Don't over-steep the tequila — 24 hours gives you flavour complexity without bitterness. Taste-test at the 24-hour mark and strain immediately once it hits the right note. Sweetness: If your pineapple juice is very sweet, reduce the agave syrup slightly to keep the cocktail balanced.
